Fall Friday (Recipes and Giveaways!)

Good ol' fall with its good ol' food! Not just candy, but a whole harvest of apples, pumpkins, and other treats! I'm so thankful we have all sorts of food to enjoy, even if I am a rather picky eater.

The poll I had up this week was just to give you a "taste" of what was to come. For those of you who are curious about the final results of the poll, here they are:
  • Roasted pumpkin seeds (2--16%)
  • Caramel apples (5--41%)
  • Candy Corn (2--16%)
  • Pumpkin pie (3--25%)
There were 12 votes total, and the winner was caramel apples! My roomie was disappointed that pumpkin pie was not the favorite, but either way it was fun to get your input! I love apples and apple cider, and if I was more of a fan of caramel, I'm sure I'd agree with ya'll, too. ;)

Anyway, I'm excited to announce an exciting fall giveaway today! Last spring I gave away a Walmart gift card during "Food Week," with extra entries given for those who shared recipes. It was so fun to do a sort of recipe exchange then, and I think it would be great now to do a fall-themed recipe exchange (especially now that I have more followers, which hopefully means more recipes!).

This time there will be two winners!!! The giveaway is for Love Finds You in Victory Heights, Washington or The Vigilante's Bride. Both are my gently used copies of the books. Click HERE to read my review of the former, and click HERE to read my review of the latter.


Here are the rules for the giveaway:
  • You must leave a comment which includes your e-mail address and a fall recipe.
  • You must have a U.S. or Canadian mailing address.
  • Also, please let me know which book you want to win! (Pick only one, please!)
  • The giveaway will be open though Wednesday, October 20. Winners will be announced on Thursday, October 21.
As a college student who eats her meals at the cafeteria most of the time, I'm looking forward to talking about recipes and home-cooked food! The cafeteria here isn't bad at all, but with Thanksgiving approaching, a home-cooked meal sounds delightful. I'd love to hear any fall food stories you would like to share, as well!

Help yourself to some of my store-bought candy corn as you search for a recipe. ;)

P.S. I have a plentiful TBR stack, so in order to cut back I'll offer my copy of Out on a Limb by Rachelle McCalla (a "Love Inspired Suspense" book) to the first person who can correctly guess what my vote would have been on this week's poll!

(Just to clarify, it's really hard to keep the "Love Inspired" books in pristine condition, so even though I didn't even read that much of the book, it's not in perfect condition anymore. I blame it mostly on those silly price stickers that don't want to come off nice and neat! But hey, it's a free book, right?) ;)

Hmmm... a fall recipe? Well, my mom always makes apple crisp during the fall, which is one of our favorite side dishes to have with dinner. All you need is sliced apples, cinnamon, sugar, some flour, and oats to go on the top. I can't remember how much of any of them, but I think you can pretty much wing it. Cook until golden brown, and enjoy!

apple cider (of course, a must ;))
orange slices
cinnamon sticks
cloves (optional)

heat until warm, and serve with a cinnamon stick (also optional). Enjoy!

Chocolate Chip Pumpkin Bread
3 cups white sugar
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
2/3 cup water
4 eggs
3 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts (optional)
1.Preheat oven to 350 degrees. Grease and flour three 1 pound size coffee cans or three 9x5 inch loaf pans.
2. In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts. Fill cans 1/2 to 3/4 full.
3.Bake for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from cans or pans

Moist pumpkin bread with chocolate inside is so yummy!

I have a ton of pie recipes at my blog but my favorite is fudge pie:
1 stick melted butter
¼ cup cocoa
2 eggs
1 cup sugar
¼ cup flour
1 teaspoon vanilla

Mix all in a bowl and pour into pie shell. Bake at 350 degrees. Check after 30 minutes. Pull out when the middle of pie is set.

Butterscotch haystacks! :D I'm not sure how exactly to make them, but you melt butterscotch chips and coat those chinese crunchy sticks with them. So good!

How fun! I love recipes. This is one of my favorite fall recipes...I'm slightly obsessed with it. I've eaten it almost daily on a piece of toast with some peanut butter. :)

Pumpkin Butter
Ingredients
1/4 cup brown sugar, packed
2 tablespoons granulated sugar
1/4 cup water
1/2 teaspoon allspice
1/4 teaspoon ginger
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 1/2 cups canned pumpkin (NOT pumpkin pie filling mix)

Combine everything except the canned pumpkin in a microwaveable one quart bowl. Mix well.
Microwave on high for 3 minutes, then stir.
Mix in the pumpkin well, and microwave on high 5 minutes longer. It should be bubbly.
Put into airtight container, let cool slightly, then refrigerate.
This will keep several weeks in refrigerator or can be frozen for longer storage.

I'd love to read a Vigalante's Bride.

Hmm, what you would have voted for? I am going to say Roasted Pumpkin seeds? You seem pretty health conscience. :)

My favorite fall food is probably Pecan Pie. Hang on, let me go get the recipe....

OK, I'm back. This pie is SOOOO good! We actually found it online, since it has no corn syrup, so better for you! :)

Ingredients:
1 c. pecans
1 3/4 c. brown sugar
1/4 c. flour
1/2 tsp salt
1/2 cup of milk
1/2 tsp of vanilla
3 eggs
1/2 cup of butter melted

Make your favorite pie crust and put in pie plate. Preheat to 325 and put the pecans in the crust bottom. Blend together other ingredients, slowing adding melted butter and pour over pecans. Back at 350 (this is NOT a typo :) for about an hour and fifteen minutes until pie looks puffy and set around edges and isn't overly jiggly.

Yum, yum, yum! Don't eat it all in one day!

My recipe with be my hubby's Apple Pie:
Pie crust to your liking (two)
4 cups Harelson apples, frozen/sliced/thawed
1 cup sugar
2 tblp. flour
1/8 tsp cinnamon, or more to taste

Bake at 375 for 55 minutes. The best!

Apple crisp is one of my fav fall desserts! :)

NEED
1/2 cup old-fashioned or quick-cooking oats
3 HONEY MAID Honey Grahams, finely crushed
1/3 cup firmly packed brown sugar
1/3 cup flour
1/4 cup PLANTERS Walnut Pieces (optional)
1/3 cup butter or margarine, melted
1 tsp. ground cinnamon, divided
1/2 cup firmly packed brown sugar
2 Tbsp. flour
6 cups peeled Granny Smith apple slices (about 5 medium apples)

PREHEAT oven to 375°F. Mix oats, graham crumbs, 1/3 cup each of the brown sugar and flour, the walnuts, butter and 1/2 tsp. of the cinnamon until well blended; set aside.

MIX 1/2 cup brown sugar, 2 Tbsp. flour and remaining 1/2 tsp. cinnamon in large bowl. Add apples; toss to coat. Place in 8-inch square baking dish; sprinkle with the oat topping.

BAKE 35 to 40 min. or until apples are tender. Cool slightly.

Well, Pecan Pie is definitely a favorite Fall recipe:) 3 Eggs
1 cup Karo Dark Corn Syrup
1/2 cup Sugar
2 tablespoons Butter, melted
1 teaspoon Vanilla Extract
1/8 teaspoon Salt
1 cup Chopped Pecans
1 Unbaked Pastry Shell (9-inches)
1/2 cup Chocolate Chips (optional)


Directions:
In a small bowl, lightly beat eggs. Stir in corn syrup, sugar, butter, vanilla and salt. Add pecans and mix well.

Sprinkle chocolate chips in the bottom of pie shell; pour pecan mixture over chocolate chips. Cover edges with foil. Bake at 350 degrees for 20 minutes. Remove foil; bake 20 minutes longer or until done (a knife inserted near the center should come out clean). Cool; store in refrigerator

This has chocolate chips in the bottom which adds a good taste to it.

One of our all time favorite recipes is..
Raspberry Glace' Pie
1 Baked 9" Pie Crust
3 oz Cream Cheese
1 T milk
1 Qt Red Raspberries
1 C Water
3 T Cornstarch
1 C Sugar

Mix softened Cream cheese with milk, until creamy. Spread on bottom of cooled crust.
Take 1 C of raspberries and 1/3 C water. Bring to boil and simmer about 3 min. Removed from heat and strain removing seeds.
Mix cornstarch and sugar in saucepan and add reserved water and raspberry juice. Bring to a boil and stir until thickened. Cool.
Add remaining raspberries to crust and top with cool glaze.
We get a lot of raspberries in the fall, sometimes more than in Jul. Hope you enjoy this, my daughter always requests this for her birthday!

Here is my fall recipe . . .

Slow Cooker Pot Roast

Ingredients:
2 (10.75 ounce) cans condensed cream
of mushroom soup
1 (1 ounce) package dry onion soup mix

1 1/4 cups water
5 1/2 pounds pot roast

Directions:
1. In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
2. Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

Fall recipe for cinnamon apples:
ingredients

* 4 McIntosh apples, peeled and sliced (about 2 lb.)
* 1/2 cup firmly packed light brown sugar
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 2 tablespoons water
* 1 tablespoon butter

Preparation

1. Toss together first 4 ingredients in a large zip-top plastic bag, tossing to coat apples.

2. Cook apple mixture, 2 Tbsp. water, and 1 Tbsp. butter in a medium saucepan over medium heat, stirring occasionally, 8 to 10 minutes or until apples are tender.

Pumpkin Mousse

1 box (3.4oz) vanilla pudding and pie filling mix

1/4tsp pumpkin pie spice or ground cinnamon

2/3 cup (5 oz. can) Evaporated Milk

1 cup Libby's Pure Pumpkin

1 1/2 cups thawed Cool Whip

Directions:
Combine pudding mix and pie spice in medium bowl. With whisk, add evaporated milk; mix until well blended. Add pumpkin and mix. Gently fold in Cool Whip into pudding mixture. Spoon into serving dishes. Top with additional Cool Whip and pie spice if desired. Serve immediately or cover and refrigerate.

Makes six 1/2 cup servings

Great post, Amber! I love all these wonderful recipes- thanks ladies! Please don’t enter me in the contest, though- I would have wanted The Vigilante’s Bride, but I just bought it at the Christian bookstore a couple days ago, LOL! You are so sweet with all the giveaways :)

Anyway, I did want to leave a recipe :D And, these cookies are just like their name implies- AMAZING!!!

Amazing Maple Walnut Cookies
2/3 cup Crisco
2/3 cup butter softened (11Tbs.)
1 cup sugar
1 cup brown sugar (packed)
2 Lg. eggs
1 tsp. vanilla extract
3 tsp. maple extract

3 cups flour
1 tsp. baking soda
1 tsp. salt
1 ½ cups chopped walnuts

Maple Drizzle*

Preheat oven to 350
Cream Crisco, butter and sugars in a large mixing bowl.
Blend in eggs, vanilla extract and maple extract.
Combine dry ingredients and add to butter mixture. Mix until well blended.
Stir in walnuts.
Bake 8-10 min. for normal size cookies or 12-15 min for larger cookies. Depending how chewy or crunchy you like them –I always lean more toward chewy :)

*Maple Drizzle
Combine 1 ½ cups of confectioners sugar with 1 Tbsp. melted butter, 3 Tbsp. of warm milk, and ½ cap full of maple extract. Blend to desired consistency, adding more confectioners sugar or warm milk if needed.
Put in a small zip lock bag. Snip a small hole in the bottom corner of the bag and drizzle over cooled cookies… OR just use a spoon, LOL!

Pumpkin Pie Pudding
Directions
1.In a large bowl, combine the first eight ingredients.1 (15 ounce) can solid pack pumpkin
1 (12 ounce) can evaporated milk
3/4 cup sugar
1/2 cup biscuit/baking mix
2 eggs, beaten
2 tablespoons butter or margarine, melted
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract
whipped topping
Transfer to a slow cooker coated with nonstick cooking spray. Cover and cook on low for 6-7 hours or until a thermometer reads 160 degrees F. Serve in bowls with whipped topping if desired.

Fall is my favorite season. Nothing better than sitting at home with a good read as the windows rattle from the wind! With fall comes many great foods. Pumpkin bread or pumpkin rolls are the best... but since those are probably already described above, I'll opt for something else... OREO BALLS! These are not technically a 'fall' food, but I tend to think of it as a sweet in the colder seasons of fall/winter. I cannot begin to tell you how popular these are or how easy they are to make. All you need is...
-1 package normal oreos
-1 8 oz. package of cream cheese
-white chocolate
First you blend the oreos a couple at a time in a blender. When finished put oreo crumbs in bowl and mix in the cream cheese. After well mixed, form into little balls and stick on a cookie sheet with wax paper-put them in fridge for awhile(maybe 2 hours?). Take them out then and dip them in melted white chocolate(do it fast though, cause they start to stick and stuff). When finished put them right back in the fridge. They should be ready to eat in no time!

These books sound great! Looking forward to reading them. Thanks for giving them away. Here's a recipe for Pralines that we really like.
Microwave Pralines
1 one pound box light brown sugar
2 T. light corn syrup
1 cup whipping cream
Combine brown sugar, corn syrup and whipping cream in a 8 cup measureing cup. Cook by microwave (high) for 13 minutes. Then add: 1 T. butter and 2 cups pecans. Beat candy mixture until creamy. Drop by teaspoon onto waxed paper or pour into 8 x 8 buttered pan.

Here's a great recipe perfect for the college budget:

Chili Mac
1 can Hormel Chili (with or without beans)
Macaroni noodles (cooked)
Shredded Cheddar Cheese
Lawry's Seasoning Salt

Mix everything together, microwave, eat & enjoy!!

Apple Crisp
(This is taken from TammysRecipes.com). Its great with peaches or apples
Yield:
16 servings
Ingredients:
12 cups ripe thinly-sliced peeled apples
6 tablespoons all-purpose flour
1 teaspoon ground cinnamon
6 tablespoons (packed) brown sugar
Crumb topping ingredients:
2/3 cup flour
1 1/3 cup (packed) brown sugar
2 teaspoons ground cinnamon
1 1/2 cups quick oats
2/3 cup softened butter
Instructions:
1. Grease a 9x13-inch baking dish.
2. In a large bowl, mix 6 tablespoons flour, 1 teaspoon cinnamon, and 6 tablespoons brown sugar. Add sliced apples and toss to coat. Spread apples in prepared pan.
3. In another bowl, combine crumb topping ingredients and stir/cut together with a fork until crumbly. Sprinkle over the apples.
4. Bake apple crisp in a pre-heated 375 degree oven for about 35-45 minutes or until peaches test done with a fork. Enjoy hot or cold or with ice cream! :)

Mmm the best fall recipe is the hot chocolate that we made the other day for the first time! DELICIOUS!

1/4 cup sugar
1 tablespoon baking cocoa
1/8 teaspoon salt
1/4 cup hot water
1 tablespoon butter or margarine
4 cups milk
1 teaspoon maple flavoring
1 teaspoon vanilla extract
12 large marshmallows

Directions
1.In a large saucepan, combine sugar, cocoa and salt. Stir in hot water and butter; bring to a boil. Add the milk, maple flavoring, vanilla and 8 marshmallows. Heat through, stirring occasionally, until marshmallows are melted. Ladle into mugs and top each with a marshmallow.

I was very skeptical cause it had maple syrup and butter in it(and how weird is that?!) but it turned out to be the most delicious think I've ever tastes. YUM!

Whew! By posting so late..I really need to think. So many above that sound scrumptious.

Hazel-Nuts Cocoa Supreme
1 25 calorie packet diet hot cocoa mix
2 tsp. Coffee-mate sugar free Hazelnut powdered creamer
2 tsp unsweetened cocoa powder
2 tsp mini semi-sweet chocolate chips
1/4 cup fat free Reddi Whip
Optional garnish: add'l unsweet cocoa powder

Place all ing's excep Reddi-Whip in a mug. Add 1 cup very hot water and stir until ing's are fully dissolved, melted and combined.

Top with Reddi-Whip and, if you like, sprinkle with add'l cocoa powder. Consume as soon as you can without burning your tongue.
Makes 1 Serving.

114 Calories, 5g fat, 173 mg sodium 15.5g carbs, 2.5g fiber, 9g sugars, 3g protein.

I love all the fall recipes but I think since most people mentioned apple recipes I will mention a sweet potato recipe my family makes a lot.
Sweet Potato Casserole

3 Cups mashed sweet potatoes
1 Cup sugar
1/2 teaspoon salt
2 eggs
1/3 stick butter
1/2 cup milk
1 tsp vanilla
Mix all these ingredients together until well mixed. pour into a greased baking dish.
Top with the following items mixed together.

1Cup light brown sugar
1Cup chopped pecans
1/3 Cup flour
1/3 stick melted butter

Bake at 350 degrees for 20-25 min. or until bubbly and brown

jenmmcclure's (recipe above) is like my Sweet Potato Casserole but I add 1/2 (or more) of finely grated coconut to topping and some eaters think it taste like pecan pie.
I do a lot of baking during holidays and this is a favorite.

Mississippi Mud Cake
2 Cups Sugar, 1 Cup Butter, 1/3 Cup Cocoa, 1 1/2 Cup flour(plain), 1/2 cup milk, 4 eggs, 3 tsp. vanilla, 1/4 tsp salt, 1 cup (or more) chopped pecans. (we southerners love pecans).
Cream sugar, butter and cocoa together. Add vanilla, flour, salt, eggs and milk, Beat well. Add pecans and Bake in 9X12 pan for 45 mins at 350 degrees. (ck if done with toothpick in center of cake)
While cake is still hot, cover completely with miniature marshmallows. If they don't melt enough, sit in oven for 2-3 mins.
Icing
1 Cup melted butter or margarine, 1 box confectioners sugar, 1 tsp vanilla, 1/3 cup sweet milk, 1/3 cup cocoa, 1/2 cup(or more) pecans chopped.
Melt butter in boiler, add confectioners sugar, milk, cocoa and vanilla. Stir well add pecans and pour over cake. Let set about an hour before cutting. This is so good but so sweet you should cut in small pcs. or someone could get sick. lol The icing is like fudge.
I also bake Red Velvet Cake with filling and icing, Coconut cake with finely chopped pecans in batter, toll house cookies with pecans and chopped candied cherries or coconut, wedding cookies, tea cakes. I do go crazy baking during holidays.
