(we southerners love pecans).<br />Cream sugar, butter and cocoa together. Add vanilla, flour, salt, eggs and milk, Beat well. Add pecans and Bake in 9X12 pan for 45 mins at 350 degrees. (ck if done with toothpick in center of cake)<br />While cake is still hot, cover completely with miniature marshmallows. If they don't melt enough, sit in oven for 2-3 mins.<br />Icing<br />1 Cup melted butter or margarine, 1 box confectioners sugar, 1 tsp vanilla, 1/3 cup sweet milk, 1/3 cup cocoa, 1/2 cup(or more) pecans chopped.<br />Melt butter in boiler, add confectioners sugar, milk, cocoa and vanilla. Stir well add pecans and pour over cake. Let set about an hour before cutting. This is so good but so sweet you should cut in small pcs. or someone could get sick. lol The icing is like fudge.<br />I also bake Red Velvet Cake with filling and icing, Coconut cake with finely chopped pecans in batter, toll house cookies with pecans and chopped candied cherries or coconut, wedding cookies, tea cakes. Stir in hot water and butter; bring to a boil. Add the milk, maple flavoring, vanilla and 8 marshmallows. Heat through, stirring occasionally, until marshmallows are melted. Ladle into mugs and top each with a marshmallow. <br /><br />I was very skeptical cause it had maple syrup and butter in it(and how weird is that?!) but it turned out to be the most delicious think I've ever tastes. Its great with peaches or apples<br />Yield: <br />16 servings<br />Ingredients: <br />12 cups ripe thinly-sliced peeled apples<br />6 tablespoons all-purpose flour<br />1 teaspoon ground cinnamon<br />6 tablespoons (packed) brown sugar<br />Crumb topping ingredients:<br />2/3 cup flour<br />1 1/3 cup (packed) brown sugar<br />2 teaspoons ground cinnamon<br />1 1/2 cups quick oats<br />2/3 cup softened butter<br />Instructions: <br />1. Grease a 9x13-inch baking dish.<br />2. In a large bowl, mix 6 tablespoons flour, 1 teaspoon cinnamon, and 6 tablespoons brown sugar. Add sliced apples and toss to coat. Pumpkin bread or pumpkin rolls are the best... but since those are probably already described above, I'll opt for something else... OREO BALLS! These are not technically a 'fall' food, but I tend to think of it as a sweet in the colder seasons of fall/winter. I cannot begin to tell you how popular these are or how easy they are to make. All you need is...<br /> -1 package normal oreos<br /> -1 8 oz. package of cream cheese<br /> -white chocolate<br /> First you blend the oreos a couple at a time in a blender. When finished put oreo crumbs in bowl and mix in the cream cheese. After well mixed, form into little balls and stick on a cookie sheet with wax paper-put them in fridge for awhile(maybe 2 hours?). Take them out then and dip them in melted white chocolate(do it fast though, cause they start to stick and stuff). When finished put them right back in the fridge. Blend to desired consistency, adding more confectioners sugar or warm milk if needed.<br />Put in a small zip lock bag. With whisk, add evaporated milk; mix until well blended. Add pumpkin and mix. Gently fold in Cool Whip into pudding mixture. Spoon into serving dishes.
